Ingredients
  

Taco Beef Mixture

  • 1 pound ground beef leaner cut recommended
  • 1 packet (1 oz) taco seasoning
  • 1/4 cup water
  • 1/2 cup softened cream cheese
  • 1/4 cup ranch dressing or 2 tablespoons dry ranch seasoning mixed with 2 tablespoons water
  • 1 cup shredded cheddar cheese
  • 1/4 cup finely diced bell pepper any color, optional
  • 1/4 cup corn kernels optional

Shells

  • 1 can (8 oz) refrigerated crescent roll dough OR 1 package (10 oz) wonton wrappers
  • 1 package (10 oz) wonton wrappers

For Serving (Optional)

  • Salsa
  • sour cream
  • chopped cilantro

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Brown the ground beef in a skillet over medium heat, breaking it apart, then drain any excess fat.
  • Add taco seasoning and water to the cooked beef, stir, and cook for 1-2 minutes until fragrant, then remove from heat.
  • Combine the seasoned meat, softened cream cheese, ranch dressing, shredded cheddar cheese, and optional bell pepper or corn in a bowl and mix until uniform.

Assembly and Baking

  • If using crescent roll dough, unroll and separate triangles, then place a spoonful of filling on the wider end of each and roll up, sealing the edges.
  • If using wonton wrappers, place a small dollop of filling in the center, moisten edges with water, then fold into a triangle or desired shape, pressing firmly to seal.
  • Arrange the assembled bites on the prepared baking sheet without overcrowding.
  • Bake for 10-15 minutes, or until golden brown and heated through.
  • Let the bites cool slightly before serving warm with optional salsa, sour cream, or cilantro.

Notes

For extra flavor, try adding a pinch of garlic powder or onion powder to the beef mixture. If you want a little kick, a dash of hot sauce can be mixed in with the ranch dressing. These bites can also be made ahead of time and reheated in the oven, though they are best served fresh for optimal crispiness of the shell.
