  • 2 cups mixed berries strawberries, blueberries, raspberries, washed and hulled if necessary
  • 1 cup baby spinach or mixed greens
  • 1/4 cup crumbled goat cheese optional
  • 1/4 cup toasted pecans or walnuts optional

Honey-Lime Vinaigrette

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon Dijon mustard
  • salt Pinch of
  • black pepper Pinch of

Instructions
 

Preparation

  • In a large bowl, gently combine the mixed berries and spinach or mixed greens.
  • If desired, sprinkle crumbled goat cheese and toasted pecans or walnuts over the salad.
  • For the vinaigrette, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper in a small bowl until well combined.
  • Just before serving, drizzle the vinaigrette over the salad and toss gently to coat.
  • Serve immediately as a refreshing side dish or light meal.

Notes

For best results, prepare the vinaigrette just before serving to prevent the greens from wilting. You can adjust the amount of honey and lime juice to your taste preference.
