Ingredients

  • 3 cups cooked Sushi Rice, prepared with rice vinegar, sugar, and salt
  • 1 lb Salmon Fillet, skinless and boneless, cooked and flaked
  • 1/2 cup Mayonnaise (Japanese mayo like Kewpie preferred)
  • 2-3 tablespoons Sriracha or to taste
  • 1 tablespoon Soy Sauce plus more for serving
  • 1 teaspoon Sesame Oil
  • 2-3 stalks Green Onions, thinly sliced
  • 2 tablespoons Furikake or to taste

Optional Toppings

  • Avocado slices
  • pickled ginger
  • sesame seeds
  • thinly sliced jalapeño

For Serving

  • Nori Sheets, cut into quarters

Instructions
 

Preparation

  • Cook sushi rice per package directions, then gently fold in vinegar, sugar, and salt, covering loosely to cool.
  • Bake salmon at 400°F (200°C) for 12-15 minutes until cooked, then flake it with a fork and let it cool.
  • Combine flaked salmon with mayonnaise, Sriracha, soy sauce, sesame oil, and half the green onions; mix gently and adjust seasoning to taste.

Assembly and Baking

  • Preheat oven to 375°F (190°C), lightly grease an 8x8 inch baking dish, and press the seasoned sushi rice evenly into the bottom.
  • Spread the spicy salmon mixture over the rice layer, then sprinkle generously with furikake.
  • Bake for 15-20 minutes, or until the top is golden and bubbly.

Serving

  • Garnish with the remaining green onions and optional toppings like avocado, extra furikake, or sesame seeds. Serve warm with nori sheets.

Notes

For an extra kick, add a dash of togarashi to the salmon mixture. Adjust the amount of sriracha to control the spice level according to your preferences. You can also customize toppings a lot, try mango or cucumber for extra freshness along with other ingredients like avocado slices, pickled ginger, sesame seeds, thinly sliced jalapeño and nori sheets.
