Ingredients
  

Main Ingredients

  • 1 cup red lentils (masoor dal), split and husked
  • 0.5 inch ginger, peeled
  • 2-3 cloves garlic
  • 1-2 green chilies adjust to your spice preference
  • 0.5 teaspoon cumin seeds
  • 0.25 teaspoon turmeric powder
  • A pinch asafoetida (hing) optional
  • Salt to taste
  • Water as needed
  • Oil or ghee for cooking

Instructions
 

Preparation

  • Rinse the red lentils thoroughly, then soak them in fresh water for 2-4 hours, or preferably overnight.
  • Drain the soaked lentils and transfer them to a blender with ginger, garlic, green chilies, cumin seeds, turmeric, asafoetida (if using), salt, and 1/4 cup of water.
  • Blend until thoroughly smooth, adding more water one tablespoon at a time until the batter has a thin crepe consistency.
  • Pour the batter into a bowl, cover, and let it rest for 15-30 minutes.

Cooking

  • Heat a non-stick pan or cast-iron griddle over medium heat and lightly grease it with oil or ghee.
  • Pour 1/4 to 1/3 cup of batter onto the hot pan, then quickly tilt and swirl to spread it into a thin, even circle.
  • Cook for 2-3 minutes until the edges crisp and the surface is dry, then gently flip and cook for another 1-2 minutes until golden brown.
  • Remove the cooked crepe and repeat the process with the remaining batter, greasing the pan as needed.
  • Stack the cooked crepes on a plate and serve warm.

Notes

For extra flavor, you can add finely chopped onions or fresh cilantro to the batter before cooking. These crepes pair well with a variety of chutneys or yogurt.
