  • 1 ripe summer tomato (heirloom, beefsteak, or local variety like Cherokee Purple or Better Boy), sliced 1/4 to 1/2 inch thick
  • 2 tablespoons full-fat mayonnaise (Duke's or Hellmann's)
  • 1/4 teaspoon flaky sea salt or kosher salt (or to taste)
  • 1/8 teaspoon freshly ground black pepper (or to taste)

Instructions
 

Preparation

  • Wash the tomato thoroughly and slice it into even 1/4 to 1/2-inch thick rounds using a sharp serrated knife.
  • Lay the tomato slices on a plate or paper towel and sprinkle liberally with flaky sea salt and freshly ground black pepper on one side.
  • Let the seasoned tomato slices sit for 5-10 minutes to draw out excess water and concentrate their flavor, optionally repeating on the other side.

Assembly

  • Take two slices of soft white bread, ensuring they are not toasted.
  • Spread a generous, even layer of full-fat mayonnaise on one side of each bread slice, extending to the edges.
  • Arrange the seasoned tomato slices on one piece of mayo-covered bread, overlapping if needed to cover the surface.
  • Place the second mayo-covered bread slice on top, mayonnaise-side down, and gently press the sandwich together.

Serving

  • For an authentic experience, slice the sandwich in half diagonally and serve immediately to enjoy the best texture and flavor.

Notes

For the best flavor, use ripe, in-season summer tomatoes. The quality of the mayonnaise also significantly impacts the taste; Duke's or Hellmann's are recommended for an authentic Southern flavor.
