  • 4-6 bone-in or boneless pork chops (1-inch thick)
  • 1/4 cup all-purpose flour (for dredging)
  • 1-2 tbsp neutral oil (vegetable, canola, or grapeseed)
  • 1 tbsp butter
  • medium yellow onion thinly sliced
  • 2-3 garlic cloves, minced
  • 2 tbsp all-purpose flour (for roux)
  • 2-3 cups chicken or beef broth (low-sodium)
  • 1/4 cup heavy cream (optional)
  • Salt to taste
  • Black pepper to taste
  • Paprika to taste
  • Garlic powder to taste
  • Onion powder to taste
  • Fresh parsley chopped (optional, for garnish)

Instructions
 

Preparation

  • Pat pork chops dry with paper towels and season generously with salt, black pepper, paprika, garlic powder, and onion powder.
  • Lightly dredge each seasoned pork chop in 1/4 cup all-purpose flour, making sure to shake off any excess.

Cooking

  • Heat a large skillet over medium-high heat with 1-2 tablespoons of neutral oil. Sear pork chops for 3-4 minutes per side until golden brown, then remove to a plate.
  • Reduce heat to medium, leaving about a tablespoon of oil and browned bits in the pan; add 1 tablespoon of butter.
  • Add sliced onions and cook for 5-7 minutes until softened, then add minced garlic and cook for 1 minute until fragrant.
  • Sprinkle 2 tablespoons of flour over the onions and garlic, stirring constantly for 1-2 minutes to cook the flour.
  • Slowly whisk in 2 cups of chicken or beef broth until simmering and the gravy begins to thicken.
  • Return seared pork chops to the skillet, nestling them in the gravy. Cover and simmer on low for 20-30 minutes until tender (internal temperature 145°F).
  • If desired, stir in heavy cream during the last 5 minutes of simmering. Adjust seasonings as needed for taste.
  • Remove from heat and let the chops rest in the gravy for a few minutes. Garnish with fresh parsley before serving.

Notes

For extra flavor, consider using homemade broth. Adjust simmering time based on pork chop thickness; thinner chops will cook faster. Serve with mashed potatoes or rice to soak up the delicious gravy.
