Main Ingredients

  • 1 lb large shrimp, peeled and deveined, tails on or off
  • 2 tbsp vegetable oil (or canola, grapeseed)
  • 1 head broccoli, cut into small florets
  • 2 carrots, thinly sliced or julienned
  • 1 red bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated optional

For the Sauce

  • ¼ cup low-sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • ¼ cup water or chicken broth

For Serving & Garnish

  • Cooked rice, noodles, or quinoa for serving
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions
 

Preparation

  • Peel and devein the shrimp, then chop all vegetables, mince garlic, and grate ginger.
  • Whisk together soy sauce, oyster sauce, rice vinegar, brown sugar, and sesame oil in one bowl; in a separate bowl, dissolve cornstarch in water or broth and add it to the sauce mixture, then whisk well and set aside.

Cooking

  • Heat 1 tablespoon of oil in a wok or skillet over high heat, then add shrimp and cook for 1-2 minutes per side until pink and opaque; remove shrimp and set aside.
  • Add the remaining 1 tablespoon of oil to the wok, then add broccoli and carrots and stir-fry for 3-4 minutes until tender-crisp.
  • Add red bell pepper and onion and stir-fry for 2-3 minutes; add minced garlic and grated ginger and stir-fry for 30 seconds until fragrant.
  • Return shrimp to the wok with vegetables, re-whisk the sauce, and pour it over the ingredients; toss gently for 1-2 minutes until the sauce thickens and coats everything.

Serving

  • Garnish with sesame seeds and chopped green onions, then serve immediately over rice, noodles, or quinoa.

Notes

For extra flavor, marinate the shrimp in a tablespoon of the soy sauce mixture for 10-15 minutes before cooking. Adjust the spice level by adding a pinch of red pepper flakes with the garlic and ginger.
