  • 1.5 lbs large shrimp, peeled and deveined fresh or frozen, thawed
  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 2 garlic minced
  • 1 bell pepper (any color) sliced
  • 1 cup cherry tomatoes halved
  • 0.5 cup chicken or vegetable broth
  • lemon Juice of ½
  • 2 tbsp fresh parsley chopped
  • 1 tsp paprika
  • 0.5 tsp dried oregano
  • Salt and black pepper to taste
  • red pepper flakes Pinch of (optional, for a kick)

  • Pat the peeled and deveined shrimp dry with paper towels. Toss the shrimp with paprika, oregano, salt, pepper, and red pepper flakes in a medium bowl.
  • Heat olive oil in a large skillet over medium-high heat. Add the chopped onion and cook until softened for 3-4 minutes.
  • Stir in the minced garlic and sliced bell pepper and cook for 3-5 minutes until softened. Add the halved cherry tomatoes and cook for 2 more minutes.
  • Push vegetables to one side, add seasoned shrimp in a single layer, and cook for 1-2 minutes per side until pink and opaque.
  • Pour in broth and lemon juice, bring to a simmer, scraping up browned bits, and cook for 1-2 minutes to reduce the sauce.
  • Remove from heat, stir in fresh parsley, adjust seasoning, and serve immediately.

Notes

For extra flavor, marinate the shrimp for 10-15 minutes before cooking. Adjust the amount of red pepper flakes to your preferred spice level.
