  • 1.5 lbs Ground Beef
  • 4-5 medium Potatoes Russet or Yukon Gold
  • 1 large Onion yellow or white
  • 1 can Canned Tomato Soup 10.75 oz
  • 1/2 cup Water
  • Salt to taste
  • Black Pepper to taste
  • 1 tsp Garlic Powder
  • 1 cup Shredded cheddar cheese Optional

Cooking Steps

  • Brown the ground beef in a large skillet, drain excess grease, then season with salt, pepper, and garlic powder before setting aside.
  • Preheat oven to 350°F (175°C), grease a 9x13-inch baking dish, and thinly slice potatoes and onion.
  • Arrange half of the sliced potatoes in the baking dish and season lightly with salt and pepper.
  • Spread the browned ground beef evenly over the potato layer.
  • Place all of the sliced onions over the beef layer.
  • Top with the remaining sliced potatoes and season again with salt and pepper.
  • Whisk together canned tomato soup and water in a medium bowl until smooth.
  • Pour the soup mixture evenly over the top potato layer.
  • Cover the baking dish tightly with aluminum foil and bake for 1 hour.
  • Remove foil, sprinkle with shredded cheddar cheese if desired, and bake uncovered for 20-30 minutes more until potatoes are tender and cheese is bubbly.
  • Let the casserole rest for 5-10 minutes before serving.

Notes

For best results, slice your potatoes and onions to a consistent thickness to ensure even cooking.
