  • 2 medium-sized sweet potatoes peeled and diced into 1-inch cubes
  • 1 pound green beans trimmed

Seasoning

  • 2-3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt & black pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, combine the diced sweet potatoes and trimmed green beans, then drizzle with olive oil and sprinkle with all the seasonings.

Roasting

  • Toss everything together until the vegetables are well coated with oil and seasonings.
  • Transfer the seasoned vegetables onto the prepared baking sheet, spreading them out in a single layer to avoid crowding.
  • Roast for 20-25 minutes, stirring halfway through, until the sweet potatoes are tender and the green beans are cooked to your liking.

Serving

  • Carefully remove the tray from the oven and serve hot as a main course or a side dish.

Notes

For extra flavor, you can add a squeeze of fresh lemon juice or a sprinkle of fresh herbs like parsley or cilantro after roasting. Adjust seasoning to your preference, especially salt and pepper. If using two baking sheets, rotate them halfway through for even cooking.
