  • 1 lb ground breakfast sausage (mild, medium, or hot)
  • 8 oz cream cheese softened
  • 1 can Rotel diced tomatoes with green chilies (10 oz), undrained (Original mild or Hot)
  • 2 cups Bisquick baking mix
  • ½ cup shredded sharp cheddar cheese
  • garlic powder or onion powder Optional: A pinch of

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine softened cream cheese, undrained Rotel, Bisquick, ground sausage, shredded cheddar cheese, and optional garlic or onion powder.

Mixing and Baking

  • Thoroughly mix all ingredients by hand until well combined and uniform.
  • Roll the mixture into 1-inch to 1.5-inch balls and place them an inch apart on the prepared baking sheet.
  • Bake for 20-25 minutes, or until golden brown and cooked through (internal temperature of 160°F/71°C).
  • Remove from oven and let cool for a few minutes before serving.

Notes

For best results, ensure the cream cheese is fully softened before mixing. You can also prepare these ahead of time and bake them just before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
