  • 1 lb lean ground beef 90/10 or leaner
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced (divided)
  • Salt and black pepper to taste
  • 1 tsp Italian herbs optional, for beef

Green Beans

  • 1 lb green beans trimmed
  • 1 tbsp olive oil for green beans
  • red pepper flakes optional, for green beans

Sweet Potatoes

  • 1 medium sweet potato peeled and cubed
  • 1 tbsp olive oil for sweet potato
  • 1/2 tsp paprika for sweet potato

Garnish

  • Fresh parsley chopped (for garnish)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Toss the cubed sweet potato with olive oil, paprika, salt, and pepper in a bowl, then spread them in a single layer on the baking sheet.
  • Roast the sweet potatoes for 20-25 minutes, flipping them halfway through, until they are tender and slightly caramelized.

Cooking the Beef

  • While the sweet potatoes roast, heat olive oil in a large skillet over medium-high heat.
  • Add the chopped onion and cook until softened (3-5 minutes), then add the ground beef and cook until browned, draining any excess fat.
  • Stir in 1 clove of minced garlic, salt, pepper, and Italian herbs, cooking for another minute until fragrant.

Preparing Green Beans

  • Heat olive oil in a separate skillet or the same skillet (after removing the beef) over medium-high heat, then add the trimmed green beans.
  • Sauté the green beans for 5-7 minutes until tender-crisp, then add the remaining minced garlic, red pepper flakes (if using), salt, and pepper, cooking for 1-2 more minutes.

Serving

  • Arrange the cooked ground beef, roasted sweet potatoes, and sautéed green beans on plates, then garnish with fresh chopped parsley and serve.

Notes

For meal prep, you can cook the beef, sweet potatoes, and green beans in advance and store them in separate containers in the refrigerator for up to 3-4 days. Reheat gently in the microwave or on the stovetop. Adjust seasoning to your preference.
