  • 2-3 per serving large eggs
  • 2-3 tablespoons per serving pizza sauce (marinara or arrabbiata)
  • 1/4 cup per serving shredded mozzarella cheese (low-moisture, part-skim)
  • 1 teaspoon olive oil or butter

Optional Toppings

  • Mini pepperoni
  • finely diced bell peppers
  • diced onion (sautéed)
  • sliced mushrooms (sautéed)
  • crumbled cooked sausage or ham
  • fresh basil or oregano
  • red pepper flakes

Instructions
 

Preparation

  • If using raw vegetables, quickly sauté them in a separate pan until slightly softened.

Cooking

  • Heat a non-stick skillet over medium heat with olive oil or butter, then crack in your eggs and cook until mostly set.
  • Spoon the pizza sauce evenly over the nearly cooked eggs.
  • Generously sprinkle mozzarella cheese and your chosen toppings over the sauce.
  • Cover the skillet for 1-2 minutes to melt the cheese.
  • Carefully slide the Pizza Eggs onto a plate and garnish with fresh basil or red pepper flakes, if desired, then serve immediately.
