  • 2 lbs Beef Stew Meat (chuck roast) cut into 1-inch pieces
  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 3-4 cloves Garlic minced
  • 4 cups Beef Broth low sodium
  • 2 tbsp Worcestershire Sauce
  • 1 tsp Dried Thyme
  • 1 Bay Leaf
  • 1/4 cup All-Purpose Flour
  • Salt to taste
  • Black Pepper to taste

Preparation

  • Pat the beef stew meat dry with paper towels and season generously with salt and black pepper.

Cooking

  • Heat olive oil in a Dutch oven over medium-high heat, then brown the beef in batches until a crust forms and set aside.
  • Reduce heat to medium, add chopped onion and cook until softened, then add minced garlic and cook for another minute.
  • Sprinkle flour over the onions and garlic, stirring constantly for 1-2 minutes to create a light blonde roux.
  • Gradually whisk in beef broth, then stir in Worcestershire sauce, dried thyme, and bay leaf, bringing the mixture to a simmer.
  • Return the browned beef to the pot, ensure it's submerged, and simmer covered for 1.5 to 2 hours until the beef is fork-tender.
  • Remove the bay leaf, taste and adjust seasoning, and thicken or thin the gravy as needed.

Notes

For extra flavor, consider adding a splash of red wine to the gravy along with the beef broth. This dish pairs wonderfully with mashed potatoes or egg noodles to soak up all the delicious gravy.
