  • 2 cups Sharp Cheddar Cheese freshly grated
  • ½ cup Mayonnaise Duke's recommended
  • 4 ounce jar Diced Pimentos drained well
  • 2 ounces Cream Cheese softened (optional but recommended)
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • ¼ teaspoon Cayenne Pepper optional, to taste
  • Salt to taste
  • Freshly Ground Black Pepper to taste

Preparation

  • Grate the sharp cheddar cheese and place it into a medium-sized mixing bowl.
  • Thoroughly drain the diced pimentos from the jar and add them to the cheese.
  • Whisk together the mayonnaise, softened cream cheese (if used), garlic powder, onion powder, and cayenne pepper in a separate small bowl until smooth.
  • Pour the prepared mayonnaise mixture over the cheese and pimentos.
  • Gently fold all ingredients together with a spatula until just combined, avoiding overmixing.
  • Taste the spread and adjust seasoning with salt and freshly ground black pepper as desired.
  • Cover and refrigerate the pimento cheese for at least 30 minutes, or preferably an hour, to allow flavors to meld effectively.

Notes

For an extra kick, consider adding a pinch of smoked paprika to the mayonnaise mixture. This spread is best served chilled with crostini, crackers, or fresh vegetables. It can be stored in an airtight container in the refrigerator for up to 3-4 days.
