  • 1 cup full-fat Mayonnaise
  • 4 oz jar Diced Pimentos
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Smoked Paprika optional
  • 1/4 teaspoon Cayenne Pepper or more, to taste
  • Salt to taste
  • Black Pepper to taste

  • Grate the sharp cheddar cheese.
  • Drain the diced pimentos thoroughly, pressing out any excess moisture.
  • Combine the grated cheddar cheese, drained pimentos, mayonnaise, garlic powder, onion powder, smoked paprika (if using), cayenne pepper, salt, and black pepper in a large mixing bowl.
  • Mix all ingredients until fully incorporated and the mixture has a creamy, uniform consistency.
  • Taste the pimento cheese and adjust seasonings as desired, adding more salt, pepper, or cayenne.
  • Cover the bowl and refrigerate for at least 30 minutes, or an hour, to allow the flavors to meld and the spread to firm slightly.

Notes

For best flavor, make the pimento cheese a day ahead of time to allow the flavors to deepen. Serve with crackers, vegetables, or on sandwiches.
