  • 1.5 cups Pecans finely chopped (preferably toasted for deeper flavor)
  • 2 cups Vanilla Wafers (or Graham Crackers) finely crushed (about 1 box)
  • 1 cup Powdered Sugar plus extra for rolling/dusting
  • 0.5 cup Unsalted Butter (1 stick), melted
  • 0.25 cup Light Corn Syrup (or maple syrup for a darker flavor)
  • 1.5 teaspoons Vanilla Extract
  • 1 tablespoon Bourbon or Dark Rum optional but recommended! (adds incredible depth)
  • 0.25 teaspoon Salt

Preparation

  • Preheat the oven to 350°F (175°C) and spread chopped pecans on a baking sheet. Toast for 5-7 minutes until fragrant and lightly browned, then let them cool completely.
  • Finely crush the vanilla wafers or graham crackers using a food processor or a zip-top bag and rolling pin.

Mixing

  • In a large bowl, combine the crushed wafer crumbs, 1 cup of powdered sugar, and salt.
  • In a separate bowl, melt the unsalted butter and stir in the light corn syrup, vanilla extract, and optional bourbon or rum.
  • Pour the wet ingredients into the dry ingredients and mix thoroughly until a cohesive, sticky dough forms.
  • Gently fold in the cooled, toasted pecans, ensuring they are evenly distributed throughout the mixture.

Forming and Chilling

  • Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes to make it easier to roll.
  • Scoop out about 1 tablespoon of the chilled mixture and roll into compact spheres; if sticky, return to the fridge.
  • If desired, melt chocolate and dip each ball halfway or drizzle over the tops, then place on parchment-lined baking sheet.
  • Refrigerate the finished Pecan Pie Balls for at least 1 hour, or until firm, for optimal texture and flavor.

Notes

Toasting the pecans is crucial for enhancing their flavor and aroma. For an extra festive touch, roll the chilled balls in additional powdered sugar or finely chopped nuts before serving. These balls can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. They also freeze well for longer storage.
