This classic one-pan Greek chicken with olives and feta brings together succulent chicken, vibrant vegetables, and briny olives for a flavorful and easy-to-make meal.

Ingredients
  

For the Chicken

  • 1.5 lbs boneless, skinless chicken thighs or breasts cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 Juice of lemon

For the Vegetables & Flavor

  • 1 red onion cut into thick wedges
  • 1 bell pepper any color, cut into 1-inch pieces
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and halved
  • 2 tablespoons olive oil for veggies
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh parsley or dill chopped (for garnish)

Instructions
 

Preparation

  • In a medium bowl, combine chicken pieces with olive oil, oregano, thyme, garlic powder, salt, pepper, and lemon juice. Toss to coat and let marinate for 15-20 minutes at room temperature, or up to 4 hours in the refrigerator.
  • Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  • Spread the marinated chicken in a single layer on the prepared baking sheet.
  • In the same bowl, toss red onion, bell pepper, and cherry tomatoes with olive oil, salt, and pepper. Arrange them around the chicken on the baking sheet.

Cooking

  • Roast for 20-25 minutes, or until the chicken reaches 165°F (74°C) and vegetables are tender-crisp.
  • Remove the sheet pan from the oven and scatter Kalamata olives and crumbled feta cheese over the chicken and vegetables.
  • Optionally, return to the oven for 3-5 minutes until the feta is slightly warm and softened.

Serving

  • Garnish generously with fresh parsley or dill before serving.

Notes

For an extra burst of flavor, add a sprinkle of red pepper flakes with the vegetables before roasting. This dish is also great with a squeeze of fresh lemon juice just before serving.
