  • 1 pint cherry or grape tomatoes halved
  • 8 oz fresh mozzarella cheese sliced or torn
  • 2 tablespoons olive oil
  • 1-2 tablespoons balsamic glaze
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh basil leaves chopped or torn
  • Red pepper flakes for a little kick (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  • Pat the chicken breasts dry and slice them horizontally or pound them gently to an even 1/2-inch thickness.

Cooking

  • Place chicken cutlets and halved tomatoes on the baking sheet. Drizzle with olive oil, balsamic glaze, garlic powder, oregano, salt, and pepper, then toss to coat.
  • Roast for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), and tomatoes are soft.
  • Remove the pan from the oven and arrange mozzarella over the chicken breasts.
  • Return to the oven for 3-5 minutes, or until mozzarella is melted and bubbly; you can broil for the last minute for extra browning.

Serving

  • Carefully remove the pan from the oven, garnish with fresh basil leaves, and serve immediately.

Notes

For a richer flavor, consider marinating the chicken in balsamic glaze and garlic powder for 30 minutes before baking. Ensure chicken reaches 165°F (74°C) internal temperature for food safety. You can also add other vegetables like zucchini or bell peppers to the baking sheet alongside the tomatoes for added nutrition and flavor. Adjust seasonings to your liking, and don't hesitate to add more red pepper flakes for an extra kick!
