  • 12 large eggs
  • 1 cup milk (any kind works)
  • 1/2 cup chopped bell peppers (any color)
  • 1/4 cup chopped onion
  • 1 cup cooked breakfast sausage or diced ham optional
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste
  • 1 tablespoon olive oil

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • In a large bowl, whisk eggs and milk until combined, then season with salt and pepper.
  • Heat olive oil in a skillet over medium heat, then sauté bell peppers and onion until softened, about 5-7 minutes. Add sausage or ham, if using, and cook for 2-3 additional minutes.
  • Spread the sautéed vegetables and meat evenly into the prepared baking dish.
  • Pour the egg mixture over the vegetables and meat.
  • Sprinkle shredded cheddar cheese over the top.
  • Bake for 30-35 minutes until the center is set and the top is golden brown.
  • Let the casserole rest for 5 minutes before slicing and serving.

Notes

For a vegetarian option, simply omit the sausage or ham. You can also add other vegetables like spinach or mushrooms for extra flavor and nutrients.
