  • 1 cup Zucchini diced
  • 1 (14.5 oz) can Diced tomatoes undrained
  • 1/2 cup Chicken or vegetable broth
  • 1 tsp Italian seasoning
  • 1/2 tsp Paprika
  • 1/4 tsp Black pepper
  • Salt to taste

For Serving (Optional)

  • Cooked rice or quinoa for serving
  • Fresh parsley chopped (for garnish)

  • Add ground turkey to the skillet, breaking it apart, and cook until no pink remains; drain excess fat and set aside.

  • Add chopped bell pepper and diced zucchini to the skillet, cooking for 5-7 minutes until they begin to soften.
  • Pour in undrained diced tomatoes and broth, then stir in Italian seasoning, paprika, and black pepper, bringing the mixture to a simmer.
  • Return the cooked ground turkey to the skillet and stir everything together.
  • Simmer the mixture for 5-10 minutes to meld flavors and thicken the sauce, adjusting seasonings as needed.
  • Serve hot, optionally over rice or quinoa, and garnish with fresh chopped parsley.
