  • ½ cup fresh Key lime juice (from about 8-10 Key limes)
  • 1 teaspoon Key lime zest (optional, but highly recommended for extra zing)

Instructions
 

Prepare the Crust

  • Preheat the oven to 350°F (175°C), then combine graham cracker crumbs, sugar, and melted butter in a bowl.
  • Press the mixture into a 9-inch pie plate, bake for 8-10 minutes until golden, then cool slightly.

Make the Filling

  • Whisk together sweetened condensed milk, Key lime juice, and optional zest in a large bowl until well combined and slightly thick.

Assemble and Bake

  • Pour the filling into the cooled crust, then bake for 15-20 minutes until the edges are set.
  • Cool completely on a wire rack, then refrigerate for at least 4 hours, or preferably overnight, before serving.

Notes

For best results, use fresh Key lime juice; bottled lime juice will alter the flavor. Ensure the pie is thoroughly chilled before serving to achieve the perfect firm consistency. Garnish with a dollop of fresh whipped cream and a lime slice for an elegant presentation and added freshness.
