  • 2 tablespoons White Miso Paste
  • 1 tablespoon Mirin
  • 1 tablespoon Soy Sauce low-sodium recommended
  • 2 cloves Garlic, minced
  • 1 teaspoon Sesame Oil for cooking
  • 1/2 teaspoon Sesame Oil for finishing, optional
  • 2-3 tablespoons Water or Vegetable Broth to thin glaze
  • 2 tablespoons Green Onions (Scallions), chopped for garnish
  • 1 teaspoon Sesame Seeds, toasted for garnish, optional

Cooking Steps

  • Clean and slice the mushrooms into uniform, bite-sized pieces.
  • Heat 1 teaspoon sesame oil in a large skillet over medium-high heat, then sauté mushrooms for 5-7 minutes until browned and set aside.
  • Whisk together miso paste, mirin, soy sauce, and minced garlic in a small bowl, thinning with water or vegetable broth.
  • Return mushrooms to the skillet, pour the miso glaze over them, and toss to coat evenly.
  • Simmer for 3-5 minutes, stirring frequently, until the sauce thickens and coats the mushrooms.
  • Remove from heat, drizzle with optional sesame oil, then garnish with green onions and toasted sesame seeds before serving.

Notes

For best results, arrange mushrooms in a single layer during sautéing to ensure even browning; cook in batches if needed to avoid overcrowding the pan.
