  • 16 oz fresh shredded sharp cheddar cheese
  • 1 cup mayonnaise
  • 4 oz jar diced pimentos, drained
  • 2-3 small to medium jalapeños, finely minced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2-1 teaspoon hot sauce optional
  • Salt and black pepper to taste

Preparation

  • Wash and mince the jalapeños, removing seeds and membranes for less heat, and wear gloves.
  • Grate the sharp cheddar cheese if it is not already shredded.

Mixing and Serving

  • In a large bowl, combine mayonnaise, drained pimentos, minced jalapeños, garlic powder, onion powder, smoked paprika, and optional hot sauce.
  • Gradually add the shredded cheddar cheese and mix until well combined.
  • Taste and season the pimento cheese with salt and black pepper as desired.
  • Cover and refrigerate for at least 30 minutes, or an hour, before serving.

Notes

For variation, try adding a dash of Worcestershire sauce for extra depth of flavor, or a pinch of cayenne pepper for more heat. This pimento cheese can be stored in an airtight container in the refrigerator for up to 5-7 days.
