Classic Instant Sponge Dosa Recipe (2-Minute Dosa Batter) - Healthy Breakfast Ideas

  • 1 cup Rava (fine semolina) (160g)
  • ½ cup Rice Flour (80g)
  • ¼ cup Maida (all-purpose flour) (30g)
  • 1.5 cups Sour Curd (yogurt) (360g)
  • ½ cup Water (or as needed) (120ml)
  • 1 tsp Sugar (4g)
  • ½ tsp Turmeric Powder (optional) (1.5g)
  • Eno Fruit Salt (unflavored) OR ½ tsp Baking Soda + 1 tbsp Lemon Juice (5g Eno OR 2.5g Baking Soda + 15ml Lemon Juice)
  • Salt to taste (5g)
  • 30 ml Oil or Ghee For cooking the dosas

Optional Flavorings

  • 2 Green Chillies finely chopped (10g)
  • 1 inch Ginger grated (8g)
  • Curry Leaves A few, finely chopped (2g)
  • ¼ cup Onion finely chopped (40g)
  • 2 tbsp fresh Coriander Leaves chopped (10g)

Instructions
 

Prepare the Batter

  • In a mixing bowl, combine rava, rice flour, maida, sour curd, sugar, turmeric powder (if using), and salt.
  • Gradually add water and whisk until the batter is smooth, lump-free, and medium-thick; let it rest for 15-20 minutes.
  • If desired, stir in chopped green chillies, grated ginger, curry leaves, onions, and coriander leaves.
  • Just before cooking, add Eno fruit salt (or baking soda + lemon juice) to the batter and gently mix until frothy.

Cook the Dosa

  • Heat a non-stick tawa or cast-iron griddle over medium-high heat and lightly grease it with oil or ghee.
  • Pour a ladleful of batter onto the griddle, allowing it to spread naturally without traditional spreading.
  • Cover and cook for 1-2 minutes until the top is cooked, full of pores, and the bottom is golden brown.
  • Carefully remove the dosa and serve immediately; repeat with the remaining batter.

Notes

The resting time for the batter is crucial for the rava to soften and absorb liquids, resulting in a softer dosa. Do not overmix the batter after adding the leavening agent, as this can cause the dosa to become tough. Adjust the amount of water as needed to achieve a pourable but not too watery consistency. Serve these dosas immediately for the best texture and taste.
