Ingredients
  

Chicken

  • 4 boneless, skinless chicken thighs
  • 1 cup buttermilk

Dredge

  • 1 cup all-purpose flour
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (optional, for extra heat)
  • 1 tsp salt
  • 1/2 tsp black pepper

Frying

  • 2-3 cups vegetable oil for frying

Hot Honey

  • 1/2 cup honey
  • 2-3 tbsp hot sauce (like Frank's RedHot)

Serving

  • 4-6 flaky biscuits (homemade or store-bought)

Instructions
 

Preparation

  • Pat the chicken thighs dry and marinate them in buttermilk in the refrigerator for at least 30 minutes, or up to 2 hours.
  • While the chicken marinates, combine flour, paprika, garlic powder, onion powder, cayenne pepper (if desired), salt, and black pepper in a shallow dish, and whisk.

Cooking

  • Remove the chicken from the buttermilk, letting excess drip off, then fully coat each piece in the seasoned flour, pressing firmly and shaking off loose excess.
  • Heat 2-3 inches of vegetable oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat to 350°F (175°C).
  • Carefully place chicken in hot oil, frying 5-7 minutes per side until golden brown, crispy, and cooked to an internal temperature of 165°F (74°C).
  • Remove cooked chicken to a wire rack over a paper towel-lined baking sheet to drain excess oil.

Hot Honey & Assembly

  • In a small saucepan, gently warm honey over low heat and stir in hot sauce until combined; adjust hot sauce to taste.
  • Drizzle the warm chicken generously with hot honey and serve immediately on freshly baked or warmed biscuits.

Notes

For crispier chicken, ensure the oil maintains a consistent temperature. Adjust the amount of hot sauce in the honey to your personal spice preference. Serving with pickles can add a nice tangy counterpoint to the richness.
