Classic Hobo Casserole

This classic hobo casserole is a hearty and comforting dish, perfect for a family dinner. Layers of seasoned ground beef, tender vegetables, and sliced potatoes are baked in a creamy mushroom sauce and topped with melted cheddar cheese.

  • 1 lb Lean ground beef
  • 1 medium Onion chopped
  • 1 diced Bell Pepper (any color)
  • 4-5 medium Potatoes (Russet or Yukon Gold) thinly sliced
  • 1 can (10.5 oz) Cream of Mushroom Soup
  • ½ cup Milk
  • 1 cup shredded Cheddar Cheese
  • Salt to taste
  • Black Pepper to taste
  • 1 tsp Garlic Powder or 2 cloves minced fresh garlic

Instructions
 

Preparation

  • Brown the ground beef in a large skillet, then drain any excess grease.
  • Add chopped onion and bell pepper to the beef, sautéing until tender-crisp, then season with salt, pepper, and garlic powder.
  • Whisk together cream of mushroom soup and milk until smooth.
  • Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.

Assembly and Baking

  • Layer half of the sliced potatoes evenly in the prepared baking dish.
  • Spread the beef and vegetable mixture over the potatoes.
  • Pour half of the soup mixture over the beef layer.
  • Arrange the remaining potato slices over the soup.
  • Pour the remaining soup mixture evenly over the top potatoes.
  • Cover the dish with foil and bake for 45 minutes.
  • Remove foil, sprinkle with cheddar cheese, and bake for another 15-20 minutes until potatoes are tender and cheese is bubbly.
  • Let the casserole rest for 5-10 minutes before serving.

Notes

For extra flavor, you can use a mix of different cheeses, or add a pinch of smoked paprika to the beef mixture. If you prefer a richer sauce, replace some of the milk with heavy cream.
