Classic Healthy Turkey Vegetable Stir-Fry

Main Ingredients

  • 1 tablespoon olive oil or sesame oil
  • 1 pound lean ground turkey
  • 3 cups mixed stir-fry vegetables broccoli florets, sliced carrots, bell peppers, snow peas, sliced mushrooms, baby corn, or snap peas
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

Sauce

  • 2 tablespoons low-sodium soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon cornstarch
  • 1/4 cup chicken or vegetable broth

Optional Garnishes

  • Toasted sesame seeds
  • chopped green onions
  • red pepper flakes

Instructions
 

Preparation

  • Chop all vegetables and in a small bowl, whisk together the soy sauce, rice vinegar, honey/maple syrup, cornstarch, and broth until smooth, then set aside.

Cooking

  • Heat oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up, until fully browned and no longer pink; drain excess fat.
  • Push the cooked turkey to one side, add minced garlic and grated ginger to the empty side, and cook for about 30 seconds until fragrant.
  • Add all mixed vegetables to the skillet with the turkey and aromatics, then stir-fry for 3-5 minutes until tender-crisp.
  • Whisk the prepared sauce again, pour it over the turkey and vegetables, and stir continuously for 1-2 minutes until the sauce thickens and coats all ingredients, then remove from heat.

Notes

Serve immediately with rice or noodles, if desired. You can adjust the sweetness and spice level to your preference. This recipe is easily customizable with various vegetables. Feel free to add a dash of sriracha for some extra heat!
