Taco Bowl

  • 1 lb extra lean ground beef
  • 1 packet (1 oz) low-sodium taco seasoning
  • 1/2 cup water
  • 4 cups chopped romaine lettuce (or mixed greens)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup corn (canned, frozen, or fresh)
  • 1/2 cup black beans, rinsed and drained
  • 1/2 avocado, diced
  • 2 tbsp light sour cream or plain Greek yogurt
  • 2 tbsp salsa (mild or medium)
  • pickled jalapeƱos, fresh cilantro, a squeeze of lime Optional toppings

Preparation

  • In a large skillet, brown the ground beef over medium-high heat until no pink remains, then drain any excess fat.
  • Stir in taco seasoning and water, simmer for 5-7 minutes until the liquid is absorbed and the beef is well seasoned.
  • Divide the chopped romaine lettuce evenly among four bowls to create the base.
  • Spoon an equal portion of the seasoned ground beef over the lettuce in each bowl.
  • Arrange cherry tomatoes, red onion, corn, black beans, and diced avocado over the beef.
  • Garnish each bowl with light sour cream or Greek yogurt, salsa, and any optional toppings like cilantro or jalapeƱos, plus a squeeze of lime before serving.

Notes

For meal prep, you can cook the beef ahead of time and store it separately. Assemble bowls just before serving to maintain freshness of greens and toppings.
