  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 2-3 cloves garlic, minced
  • 2 medium zucchini, cut into half-moons or quartered, about 1/2-inch thick
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • red pepper flakes Optional: A pinch of red pepper flakes for a little heat.

Cooking Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add ground beef to the skillet, break it up, and cook until fully browned; drain excess grease.
  • Push the beef to one side, add diced onion to the empty side, and cook until softened (3-5 minutes); stir in minced garlic and cook for another minute.
  • Combine beef, onion, and garlic, then add zucchini, diced tomatoes with liquid, Italian seasoning, salt, and pepper.
  • Bring to a simmer, reduce heat to medium-low, cover, and cook for 8-10 minutes until zucchini is tender-crisp.
  • Taste and adjust seasonings as needed.

Notes

For extra flavor, top with fresh basil or grated Parmesan cheese before serving.
