  • 1/2 cup chicken or vegetable broth low sodium preferred
  • 1/4 cup unsweetened almond milk or skim milk
  • 2 tablespoons light cream cheese or Greek yogurt for extra creaminess
  • 1 tablespoon olive oil or avocado oil
  • 1/2 teaspoon salt kosher or sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon onion powder
  • Pinch smoked paprika optional, for depth

  • Preheat oven to 400°F (200°C). Toss peeled garlic with olive oil, salt, and pepper, then roast on a baking sheet for 15-20 minutes until golden and fragrant.
  • While garlic roasts, steam or boil cauliflower florets for 10-15 minutes until very tender and easily mashed, then drain thoroughly.
  • Combine cooked cauliflower, roasted garlic, broth, milk, and cream cheese or yogurt in a food processor or with an immersion blender. Blend until smooth and creamy, ensuring all ingredients are incorporated.
  • Season the mash with salt, pepper, and onion powder to taste, adjusting consistency with more liquid if desired. Garnish with fresh chives or parsley and serve immediately.

Notes

For an even richer flavor, you can brown the olive oil with a sprig of rosemary before tossing with garlic. Adjust liquid amounts gradually to achieve your preferred consistency.
