  • 1 pound ground turkey (93/7 lean)
  • 1 tablespoon olive oil or sesame oil
  • medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups mixed stir-fry vegetables (broccoli florets, sliced bell peppers, snap peas, carrots)

Sauce

  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon cornstarch
  • 1/4 teaspoon red pepper flakes (optional)

For Serving

  • Sesame seeds, for garnish (optional)
  • Cooked rice or noodles

Instructions
 

Preparation

  • Whisk together soy sauce, rice vinegar, honey, cornstarch, and red pepper flakes (if using) in a small bowl to create the sauce.
  • Heat oil in a large skillet or wok over medium-high heat. Cook ground turkey for 5-7 minutes until browned, then drain fat and set aside.
  • Sauté chopped onion for 2-3 minutes in the same skillet until softened. Add minced garlic and grated ginger, cooking for an additional minute until fragrant.
  • Add harder vegetables (carrots, broccoli) and stir-fry for 2-3 minutes. Then, add softer vegetables (bell peppers, snap peas) and continue stir-frying for 3-5 minutes until crisp-tender.
  • Return the cooked turkey to the skillet with vegetables. Re-whisk the sauce and pour it over the ingredients, stirring to coat evenly.
  • Cook for 1-2 minutes, stirring constantly, until the sauce thickens and bubbles.
  • Remove from heat, garnish with sesame seeds if desired, and serve immediately over rice or noodles.

Notes

For extra flavor, marinate the turkey in a tablespoon of soy sauce for 15 minutes before cooking. Adjust the amount of red pepper flakes to your preferred spice level. If you don't have fresh ginger, you can use 1 teaspoon of ground ginger, but fresh is recommended for the best flavor. This stir-fry is versatile; feel free to add other vegetables you enjoy, such as mushrooms or bok choy. Ensure vegetables are cut into similar-sized pieces for even cooking. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
