  • 1 pound lean ground turkey (93/7 or 90/10)
  • 1 medium onion chopped
  • 2-3 garlic cloves minced
  • 2 medium zucchinis chopped into ½-inch pieces
  • 1 bell pepper chopped (any color)
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Cooking Instructions

  • Heat olive oil in a large skillet or non-stick pan over medium-high heat.
  • Add ground turkey to the hot skillet, break it up, and cook until browned; drain excess fat if needed.
  • Add chopped onion and bell pepper, sauté for 3-5 minutes until softened, then stir in minced garlic and cook for 1 minute.
  • Toss in chopped zucchini, Italian seasoning, salt, and pepper; stir to combine.
  • Cook for 5-7 minutes, stirring occasionally, until zucchini is tender-crisp.
  • Prepare your chosen base (quinoa, rice, etc.) while the turkey and zucchini cook, then divide into bowls.
  • Spoon the turkey and zucchini mixture over the base, garnish with optional toppings, and serve immediately.

Notes

For added flavor, consider a squeeze of lemon juice or a dash of smoked paprika with the other seasonings. Enjoy with your favorite base and toppings for a complete meal!
