  • 1 large flour tortilla
  • 1/2 cup shredded Monterey Jack cheese (for inside)
  • 1/2 cup shredded Cheddar cheese (for outer crust)
  • 1/2 cup cooked ground beef, seasoned
  • 1/4 cup cooked rice (e.g., cilantro-lime rice)
  • 2 tablespoons salsa
  • 1 tablespoon sour cream
  • 1 tablespoon butter or mayonnaise

Preparation

  • Ensure all burrito fillings are cooked, warmed, and ready.
  • Lightly warm the large flour tortilla in a dry skillet or microwave for 10-15 seconds to make it pliable.

Assembly

  • Sprinkle 1/2 cup of shredded Cheddar cheese directly onto a cold, non-stick pan or griddle over medium heat.
  • Immediately place the warmed tortilla on top of the melting Cheddar cheese, pressing gently to adhere.
  • Spread 1/2 cup of Monterey Jack cheese down the center of the tortilla, leaving space on the sides for folding.
  • Spoon the seasoned ground beef, cooked rice, and salsa over the Monterey Jack cheese layer, creating a neat line down the center.
  • Add a dollop of sour cream over the fillings.
  • Fold the short ends of the tortilla over the fillings, then bring one long side over, tucking it tightly. Roll the burrito over completely to seal, creating a tight package.

Cooking

  • Carefully flip the entire burrito over so the seam side is down and the outer Cheddar cheese is now facing up. Spread a thin layer of butter or mayonnaise on the top side of the burrito.
  • Allow the cheesy bottom side to cook until golden brown and crispy, about 3-5 minutes.
  • Carefully flip the burrito again, so the buttered side is now down. Cook until this side is also golden brown and crispy, and the internal cheese is fully melted, another 3-5 minutes.

Serving

  • Remove from the pan, slice in half (if desired), and serve immediately.

Notes

For best results, do not overfill the tortilla, as this will make it difficult to roll and seal. You can customize the fillings with your favorite ingredients, such as black beans, corn, or different types of cheese.
