These classic garlic parmesan cheeseburger bombs are a delicious and fun appetizer or meal, featuring seasoned ground beef and melty cheddar cheese encased in a flaky biscuit, all brushed with a savory garlic parmesan butter.

Ingredients
  

Filling

  • 1 lb ground beef 80/20 works great for flavor
  • small onion finely diced (optional, but adds flavor)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 ounces cheddar cheese cut into 1/2-inch cubes
  • 2 refrigerated biscuit dough (16.3 oz) cans (like Pillsbury Grands!)

Garlic Parmesan Topping

  • 1/2 cup unsalted butter melted
  • 3-4 garlic cloves, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley chopped (for garnish, optional)

Instructions
 

Prepare the Filling

  • In a large skillet, brown the ground beef over medium heat, adding diced onion if desired, and then drain excess grease.
  • Stir in garlic powder, onion powder, salt, and black pepper, cook for one minute, then remove from heat and cool slightly.

Preheat Oven & Prep Pan

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish or line a baking sheet with parchment paper.

Assemble the Bombs

  • Flatten each biscuit into a 4-5 inch round, then place 1 tablespoon of seasoned beef mixture and one cheddar cheese cube in the center.

Seal the Bombs

  • Gather the biscuit dough edges around the filling, pinching tightly to seal without gaps, then place seam-side down in the prepared dish.

Make the Garlic Parmesan Topping

  • Combine melted butter, minced garlic, and grated Parmesan cheese in a small bowl.

Brush and Bake

  • Generously brush the tops and sides of each cheeseburger bomb with the garlic Parmesan butter mixture, then bake.

Bake

  • Bake for 18-22 minutes until golden brown, cooked through, and the cheese is melted and bubbly.

Garnish and Serve

  • Remove from the oven and, if desired, sprinkle with fresh chopped parsley before serving hot.

Notes

For best results, ensure the biscuit dough is sealed very tightly around the filling to prevent any cheese from leaking out during baking. If you don't have fresh parsley, a sprinkle of dried parsley can be used for garnish, or it can be omitted entirely. These cheeseburger bombs are excellent served with a side of ketchup or your favorite dipping sauce.
