  • 0.25 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic minced
  • 2 tablespoons fresh basil chopped
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon fresh oregano chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • Pinch sugar optional

  • Wash tomatoes thoroughly and cut larger ones into bite-sized pieces; halve cherry or grape tomatoes if desired for better marinade absorption.
  • Place the prepared tomatoes into a medium-sized bowl.
  • In a separate small bowl, whisk together olive oil, red wine vinegar, minced garlic, chopped basil, parsley, oregano, salt, pepper, and optional sugar to create the marinade.
  • Pour the herb marinade over the tomatoes in the bowl and gently toss until evenly coated.
  • Cover and refrigerate for at least 30 minutes, or 1-2 hours for optimal flavor, allowing the tomatoes to absorb the marinade.
  • Give the tomatoes a final gentle stir just before serving.

For the best flavor, use the freshest, ripest tomatoes available. This marinade is versatile; feel free to experiment with other fresh herbs like thyme or chives.
