  • 8 oz Feta Cheese packed in brine
  • 1 English cucumber
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Fresh Dill or Mint finely chopped
  • 0.5 Lemon for fresh juice
  • Salt to taste
  • Freshly Ground Black Pepper to taste

Instructions
 

Preparation

  • Drain the feta block and cut it into approximately 1-inch cubes.
  • Wash the cucumber, then cut it into thick rounds and further into bite-sized pieces matching the feta cubes.

Assembly

  • Thread alternating pieces of cucumber and feta onto skewers, aiming for two pieces of each per skewer.

Finishing Touches

  • Arrange the skewers on a platter and drizzle generously with extra virgin olive oil.
  • Sprinkle with finely chopped fresh dill or mint, then squeeze fresh lemon juice over the top.
  • Season lightly with salt and freshly ground black pepper to taste and serve immediately.

Notes

For best flavor, use high-quality feta cheese and extra virgin olive oil. You can prepare the feta and cucumber ahead of time, but assemble and season just before serving to prevent the cucumber from getting watery.
