  • 1.5 - 2 lbs boneless, skinless chicken thighs or breasts cut into 1-inch pieces
  • 1 lb small red or yellow potatoes quartered
  • 1 head broccoli cut into florets
  • 2 medium carrots peeled and sliced into rounds

Seasoning

  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper or to taste

Garnish (Optional)

  • Fresh parsley chopped

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  • In a very large bowl, combine the chicken pieces, quartered potatoes, broccoli florets, and sliced carrots.

Seasoning & Roasting

  • Drizzle olive oil over the chicken and vegetables, then sprinkle with garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper.
  • Toss all ingredients until well coated with oil and seasonings.
  • Spread the seasoned chicken and vegetables in a single layer on the prepared baking sheet, ensuring not to overcrowd it.
  • Bake for 25-35 minutes, or until the chicken reaches 165°F (74°C) and vegetables are tender and slightly caramelized; gently shake or stir halfway through.

Serving

  • Remove from the oven and, if desired, sprinkle with fresh chopped parsley before serving.

Notes

For crispier vegetables, ensure the baking sheet is not overcrowded. If you prefer a richer flavor, consider marinating the chicken for at least 30 minutes before cooking.
