  • Skillet
  • Baking Sheet or Loaf Pan
  • Small Bowl
  • Whisk
  • Instant-Read Thermometer

Ingredients

Meatloaf

  • 1.5 lbs Ground Beef 80/20 recommended
  • 2 Eggs large
  • 1 cup Panko Breadcrumbs
  • 0.5 cup Milk
  • 1 Onion medium, finely diced
  • 2 Garlic cloves, finely minced
  • 1 tbsp Worcestershire Sauce
  • 0.5 cup Ketchup for mixture
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Glaze

  • 0.25 cup Ketchup for glaze
  • 2 tbsp Brown Sugar for glaze
  • 1 tsp Dijon Mustard for glaze

Instructions

Preparation

  • In a large bowl, combine Panko breadcrumbs and milk, then let it sit for 5-10 minutes.
  • Optionally, sauté finely diced onion and garlic in olive oil until softened, then let them cool slightly.
  • Add ground beef, cooled aromatics (if used), eggs, Worcestershire sauce, salt, and pepper to the breadcrumb mixture.
  • Gently mix all ingredients with your hands until just combined, being careful not to overmix.
  • Transfer the mixture to a baking sheet or a 9x5 inch loaf pan, shaping it into an oblong loaf 2-3 inches high if using a baking sheet.

Baking

  • Preheat the oven to 350°F (175°C) and bake the meatloaf for 45-50 minutes.
  • While the meatloaf bakes, whisk together 1/4 cup ketchup, brown sugar, and Dijon mustard in a small bowl to make the glaze.
  • After 45-50 minutes, remove the meatloaf, spread the glaze evenly over it, and return to the oven for another 15-20 minutes or until an instant-read thermometer reads 160°F (71°C) and the glaze is slightly caramelized.
  • Remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing and serving.

Notes

For best results, use a metal loaf pan for even cooking. Letting the meatloaf rest is crucial for retaining moisture.
