  • 1 pound large shrimp, peeled and deveined, tails on or off
  • 2 tablespoons olive oil
  • 1 large bell pepper, any color, thinly sliced
  • 0.5 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved (or diced regular tomatoes)
  • 0.5 cup chicken or vegetable broth
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon red pepper flakes optional
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped for garnish

Cooking Steps

  • Pat the shrimp dry and season with salt and pepper.
  • Heat 1 tablespoon of olive oil in a large skillet; cook shrimp for 1-2 minutes per side until pink, then remove and set aside.
  • Add remaining olive oil to the skillet, cook bell peppers and onion for 5-7 minutes until softened, then add garlic and red pepper flakes and cook for another minute.
  • Stir in tomatoes, Italian seasoning, salt, and pepper; cook for 2-3 minutes until tomatoes begin to soften.
  • Pour in broth and lemon juice, bring to a simmer, and cook for 2-3 minutes to reduce the sauce.
  • Return shrimp to the skillet and toss with vegetables and sauce for 1 minute to heat through.
  • Remove from heat, garnish with parsley, and serve immediately.

Notes

This dish is versatile; feel free to add other vegetables like zucchini or spinach. Serve over pasta, rice, or with crusty bread for a complete meal.
