  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup brown sugar lightly packed
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 large eggs
  • ½ cup vegetable oil or melted unsalted butter
  • 1 teaspoon vanilla extract
  • ½ cup milk any kind works!
  • 1 ½ cups fresh apples Honeycrisp, Granny Smith, or Fuji recommended, peeled, cored, and finely diced

  • Preheat oven to 350°F (175°C).
  • Lightly grease and flour an 8x8 inch square baking pan or a 9-inch round cake pan.
  • In a large mixing bowl, whisk together eggs, oil (or butter), milk, and vanilla extract until smooth.
  • Gradually add granulated sugar, brown sugar, flour, baking soda, cinnamon, nutmeg, and salt to the wet mixture.
  • Stir with a spatula until dry ingredients are just incorporated; avoid overmixing.
  • Gently fold the diced apples into the batter until evenly distributed.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Cool the cake in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, ensure all wet ingredients are at room temperature before mixing. The cake is delicious on its own, but can also be served with a dusting of powdered sugar or a dollop of whipped cream.
