  • 1 lb ground turkey 93% lean or higher works best
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 1 bell pepper any color, chopped
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 cup chicken or vegetable broth
  • 1 tsp dried Italian seasoning
  • ½ tsp smoked paprika
  • Salt and black pepper to taste

Optional additions

  • ½ cup frozen corn or peas
  • ¼ cup fresh parsley or cilantro chopped for garnish

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, breaking it apart, then drain excess fat.
  • Add chopped onion and bell pepper to the skillet; sauté for 5-7 minutes until soft. Stir in minced garlic and cook for another minute until fragrant.
  • Pour in undrained diced tomatoes and chicken broth. Stir in Italian seasoning, smoked paprika, salt, and pepper, then bring to a gentle simmer.
  • Reduce heat to medium-low, cover, and simmer for 10-15 minutes until flavors meld and vegetables are tender. If using, mix in frozen corn or peas during the last 5 minutes.
  • Remove from heat, taste, and adjust seasonings. Garnish with fresh parsley or cilantro if desired, and serve hot.

Notes

For a richer flavor, use fire-roasted diced tomatoes. You can also add a pinch of red pepper flakes for a little heat.
