  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1 yellow onion chopped
  • 2 cloves garlic minced
  • 2 sweet potatoes peeled and diced
  • 4 cups fresh kale stems removed and chopped
  • 1 (15-ounce) can diced tomatoes undrained
  • 1 cup chicken or vegetable broth
  • 1 tsp dried thyme
  • Salt and black pepper to taste

Cooking Steps

  • Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground turkey, cook until browned, and drain excess fat.
  • Add chopped onion to the skillet and cook until softened, then stir in minced garlic and cook for another minute.
  • Stir in diced sweet potatoes, diced tomatoes, chicken broth, and dried thyme. Simmer, cover, and cook for 10-15 minutes until sweet potatoes are tender.
  • Uncover and stir in chopped kale. Cook for 3-5 minutes, stirring occasionally, until the kale has wilted.
  • Season with salt, pepper, and optional red pepper flakes to taste. Serve hot.

Notes

This recipe is easily adaptable. Feel free to add other vegetables like bell peppers or spinach. For a creamier texture, stir in a splash of milk or cream at the end.
