  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1 packet (1 oz) taco seasoning (or homemade blend: 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, ½ tsp garlic powder, ¼ tsp onion powder, salt and pepper to taste)
  • ½ cup water or chicken broth
  • 2 cups cooked brown rice or white rice (or cauliflower rice)

Toppings

  • 1 cup canned black beans, rinsed and drained
  • 1 cup canned corn, drained
  • 1 cup salsa (mild, medium, or hot)
  • ½ cup chopped fresh cilantro
  • 1 avocado, diced
  • ¼ cup plain Greek yogurt or sour cream
  • Lime wedges for serving
  • Shredded lettuce (optional)
  • Diced tomatoes (optional)
  • Shredded cheese (cheddar or Monterey Jack) (optional)
  • Pickled jalapeños (optional)

Instructions
 

Cooking Turkey

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey, breaking it apart, and cook until browned for 5-7 minutes; drain excess fat.
  • Stir in taco seasoning and water or broth, then simmer for 5-7 minutes until liquid evaporates and turkey is coated. Remove from heat.

Assembling Bowls

  • Divide cooked rice among 2-4 bowls and top with seasoned ground turkey.
  • Arrange black beans, corn, salsa, cilantro, diced avocado, Greek yogurt or sour cream, and a squeeze of fresh lime juice around the turkey.
  • Alternatively, for a lighter option, start with shredded lettuce, then top with turkey and your favorite burrito bowl toppings.
  • Serve immediately.

Notes

This recipe is highly customizable. Feel free to add and subtract toppings based on your personal preferences. For a spicier kick, use hot salsa or add a pinch of cayenne pepper to the taco seasoning. Store leftovers in an airtight container for up to 3 days. Reheat gently in the microwave or on the stovetop.
