  • 2 pounds Russet or Yukon Gold potatoes
  • 1/2 cup unsweetened, plain oat or almond milk
  • 1/4 cup vegan butter (1/2 stick)
  • 2 cloves garlic, minced (or 1/2 teaspoon onion powder)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Optional Enhancements

  • 2 tablespoons nutritional yeast
  • 2 tablespoons fresh chives or parsley, chopped

  • Wash, peel, and cut the potatoes into 1-inch cubes.
  • Place potatoes in a large pot, cover with cold water, and add 1 teaspoon of salt; bring to a boil, then simmer for 15-20 minutes until fork-tender.
  • Drain the cooked potatoes in a colander and return them to the hot, empty pot.
  • Mash the potatoes using a potato masher or ricer until mostly smooth.
  • In a small saucepan, gently warm the dairy-free milk and vegan butter until melted, then pour this mixture over the mashed potatoes.
  • Stir the potatoes until creamy and smooth, then mix in minced garlic, salt, black pepper, and any optional enhancements; taste and adjust seasonings as needed.

Notes

For best results, adjust seasonings to your preference after tasting. Consider adding nutritional yeast and fresh herbs for extra flavor and a cheesy note.
