  • 1.5 lbs boneless, skinless chicken thighs or breasts cut into 1-inch pieces
  • 1 tbsp olive oil
  • medium onion chopped
  • 2 cloves garlic minced
  • 2 large carrots peeled and sliced into ½-inch rounds
  • 2 stalks celery sliced
  • 1.5 lbs small potatoes such as baby Yukon golds or red potatoes, quartered
  • 1 (14.5 oz) can diced tomatoes undrained
  • 1 cup chicken broth
  • 1 tsp dried Italian seasoning
  • ½ tsp paprika
  • Salt and freshly ground black pepper to taste

  • 2 tbsp cornstarch
  • 2 tbsp cold water

  • Fresh parsley chopped, for garnish

Step-by-step instructions

  • Cut chicken breasts into 1-inch pieces; pat chicken dry with paper towels.
  • Heat olive oil in a large skillet over medium-high heat, then sear chicken for 2-3 minutes per side until lightly browned and transfer to the slow cooker.
  • In the same skillet, sauté chopped onion and minced garlic for 2-3 minutes until fragrant, then transfer them to the slow cooker with the chicken.
  • Add carrots, celery, quartered potatoes, undrained diced tomatoes, and chicken broth to the slow cooker.
  • Sprinkle in Italian seasoning, paprika, salt, and pepper, then stir to combine, ensuring ingredients are mostly submerged.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and vegetables are tender.
  • For a thicker sauce, whisk cornstarch and cold water to form a slurry, then stir into the slow cooker during the last 30 minutes of cooking until thickened.
  • Taste and adjust seasoning as needed, then garnish with fresh chopped parsley before serving.

Notes

For best flavor, don't skip searing the chicken and sautéing the aromatics. Adjust cooking time based on your slow cooker and desired tenderness of chicken and vegetables. If you don't have cornstarch, you can also reduce the liquid by simmering on high with the lid off for the last 30-60 minutes.
