Ingredients
  

Meatloaf

  • 1 ½ pounds ground beef 80/20 lean
  • ½ cup breadcrumbs plain or seasoned
  • 1 large egg lightly beaten
  • ½ cup finely chopped onion yellow or white onion works best
  • ¼ cup milk any kind works
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon dried Italian seasoning optional

For the Glaze

  • ½ cup ketchup
  • 2 tablespoons brown sugar light or dark
  • 1 tablespoon apple cider vinegar or white vinegar
  • 1 teaspoon Worcestershire sauce

Instructions
 

Prepare Meatloaf Mixture

  • In a large bowl, combine ground beef, breadcrumbs, egg, onion, milk, salt, pepper, garlic powder, and Italian seasoning; mix gently to avoid overmixing.

Shape and Place in Slow Cooker

  • Form the mixture into a loaf shape and carefully transfer it to the slow cooker, optionally elevating it on a rack or crumpled foil.

Cook

  • Cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the internal temperature reaches 160°F (71°C).

Prepare Glaze

  • About 30-45 minutes before the meatloaf is done, mix ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce.

Glaze and Finish

  • Spoon or brush the glaze over the almost-cooked meatloaf, then recover and cook for another 30-45 minutes until the glaze sets.

Rest and Serve

  • Carefully remove the meatloaf from the slow cooker and let it rest for 10-15 minutes before slicing to retain moisture.

Notes

For best results, do not overmix the meatloaf mixture to ensure a tender texture. Elevating the meatloaf in the slow cooker helps drain excess fat, contributing to a less greasy result. Resting the meatloaf after cooking is crucial for a moist and flavorful dish, allowing the juices to redistribute evenly. Feel free to adjust the amount of Italian seasoning to your preference.
