  • 2-3 lbs boneless, skinless chicken breasts or thighs
  • 2-3 large lemons zested and juiced
  • 2 tablespoons extra virgin olive oil
  • 4-5 cloves garlic minced
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons fresh parsley chopped, plus extra for garnish
  • 1 tablespoon fresh thyme or rosemary optional
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon cornstarch optional, for slurry
  • 2 tablespoons cold water optional, for slurry

  • Pat the chicken dry and season lightly with salt and pepper.
  • Whisk together lemon zest, lemon juice, olive oil, minced garlic, chicken broth, salt, pepper, paprika, and herbs in the slow cooker.
  • Add the seasoned chicken to the slow cooker, coating it thoroughly with the lemon mixture.
  • Cook on low for 3-4 hours or high for 2-3 hours until the chicken is tender.
  • If desired, remove chicken, whisk cornstarch and cold water to make a slurry, then add to the slow cooker and cook for 15-20 minutes until thickened.
  • Serve the chicken pieces whole or shred them in the slow cooker.
  • Ladle the chicken and sauce onto plates and garnish with extra fresh parsley.

Notes

For extra flavor, marinate the chicken in the lemon mixture overnight. Adjust seasonings to taste before serving.
