  • 2-3 pounds Boneless, Skinless Chicken Thighs or Breasts
  • 10.5 oz can Cream of Chicken Soup
  • 1 cup Chicken Broth
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 0.5 teaspoon Black Pepper or to taste
  • 0.5 teaspoon Dried Thyme
  • 2 tablespoons Cornstarch
  • 0.25 cup Cold Water for cornstarch slurry

  • Fresh parsley chopped

Cooking Steps

  • Place the chicken thighs or breasts evenly at the bottom of your slow cooker.
  • In a medium bowl, whisk together the cream of chicken soup, chicken broth, onion powder, garlic powder, black pepper, and dried thyme until smooth.
  • Pour the gravy mixture over the chicken in the slow cooker and cover with the lid.
  • Cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is very tender and easily shreddable.
  • Once cooked, use two forks to gently shred the chicken directly in the slow cooker, allowing it to absorb the gravy.
  • In a small bowl, whisk together the cornstarch and cold water until no lumps remain to create a slurry.
  • Stir the cornstarch slurry into the gravy in the slow cooker, then replace the lid and cook on high for an additional 15-30 minutes until thickened.
  • Ladle the chicken and gravy over your favorite sides and garnish with fresh parsley if desired.

Notes

For a richer gravy, you can brown the chicken thighs in a pan before adding them to the slow cooker. Adjust seasoning to your preference.
