  • 1 tablespoon olive oil
  • 1 teaspoon salt Kosher or sea salt recommended
  • 1/2 teaspoon black pepper freshly ground preferred
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika smoked paprika for depth, if desired
  • 1/2 teaspoon dried thyme, rosemary, or oregano Optional herbs

Preparation

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or foil, adding a wire rack if available.
  • Pat chicken thighs very dry with paper towels to ensure crispy skin.
  • Drizzle and rub olive oil all over the chicken thighs.
  • Mix salt, pepper, garlic powder, and paprika (and optional herbs) in a small bowl, then generously season both sides of the chicken, focusing on the skin.
  • Arrange seasoned chicken thighs skin-side up on the baking sheet or wire rack, ensuring space between them for air circulation.

Cooking

  • Roast for 35-45 minutes, or until internal temperature reaches 165°F (74°C) and skin is deeply golden and crispy.

Resting and Serving

  • Remove from oven and let chicken rest for 5-10 minutes before serving to redistribute juices for moist and tender results.

Notes
